Instructions
Step 1
Dice the onion and chop the carrots. Sauté in olive oil over medium heat for 10 mins.
Step 2
Add mushrooms and garlic to pan and sauté for another 10 mins.
Step 3
Mix in spices until aromatic (3-5 mins). Then add cornstarch and nutritional yeast, stirring to coat evenly.
Step 4
Add veggie broth, coconut aminos, and rinsed wild rice. Put lid on pot then bring to a boil. Then reduce temp and simmer for 40-55 mins, stirring occasionally so the rice cooks evenly.
Step 5
At the end, mix in chopped kale and coconut milk. Allow to cook until wilted. Serve garnished with Parmesan cheese, parsley, and lemon wedge!
