America’s Onion Crunch Chicken

Instructions

Step 1
Adjust oven rack to middle position and preheat to 425 degrees F.
Step 2
Finely crush fried onions until they resemble breadcrumbs.
Step 3
Combine crushed onions and Monterey Jack in a small bowl.
Step 4
Combine Greek yogurt and ranch seasoning to make dressing for chicken. Add a splash of milk to thin if necessary. The dressing mixture should resemble a ranch consistency.
Step 5
Line a cookie sheet with parchment paper or aluminum foil. Pat chicken dry with a paper towel and place on cookie sheet. (Note: If baking green beans, they can be cooked on the same cookie sheet.)
Step 6
Season both sides of the chicken with salt and pepper, and evenly spread 1/4 oz of dressing over the top of each chicken breast. Mound the onion cheese mixture over the top of the dressing and press down to adhere.
Step 7
Bake for 30 minutes or until cooked through. (Note: If crust begins to brown too quickly, loosely cover with aluminum foil.)
Step 8
Serve warm with the remaining dressing. Enjoy!
