Dr. Kat's Creamy Herb Dressing
This dressing is easy to make - the only time-consuming part is soaking the cashews. They can soak while you prepare the rest of your meal.
I usually make this with dill, but you can use whatever type of fresh herbs you have on hand.

Instructions
Step 1
Put cashews in a bowl and cover them with just-boiled water. Let soak for 30 min.
Step 2
Combine all ingredients in food processor or high-powdered blender until smooth.
Step 3
Note: you may have to thin the dressing with a small amount of water (only add 1 Tbsp at a time).
