Instructions

Step 1
In a bowl, add all purpose flour and semolina flour, the yeast (plus optional sugar), water, oil and salt.

Step 2
Knead for 10 mins, cover with cling film and rest in the fridge for 12 hours.

Step 3
Divide your dough into 3, cover with a clean cloth and rest out of the fridge for 30 mins.
Step 4
Dip each dough ball in a bowl full of semolina flour, add it on a baking tray lined with parchment paper and roll it out to a medium pizza shape.

Step 5
Season your tomato passata with salt and pepper then add a couple of tablespoons on top of each pizza.

Step 6
Add some pizza mozzarella and fresh cherry tomatoes (you can add your favourite toppings), a drizzle of oil and bake in your oven at the maximum temperature for 8/10 mins or until nice and crispy. Buon appetito!
