Instructions

Step 1
Peel and chop all the vegetables.
Step 2
Gently brown the vegetables in a saucepan with the oil and butter.
Step 3
Add the stock, bring to the boil and simmer until the vegetables are cooked. Approximately 20 minutes.
Step 4
Season to taste and liquidise.
Step 5
Serve with quenelles of goat's cheese.
