Instructions
Step 1
1. Put a deep pot over low heat. Add the sugar and let it start to melt, use wooden spatula to stir unmelted sugar in until sugar is liquid and turns an amber colour, then take off heat
Step 2
2. While the sugar is caramelising, put cream in mug and heat in microwave until hot (1 min)
Step 3
3. Whisk hot cream into sugar slowly until combined β be careful, it will bubble and can spit. If the sugar has slightly seized with chunks, put pot back over low heat
Step 4
4. Off the heat, add butter and stir with whisk until melted, then beat the caramel until butter has completely emulsified and caramel is silky and smooth (use electric hand-held beater if possible)
Step 5
5. Sprinkle in salt and stir
Step 6
6. Pour in a heat proof jar and cool completely before using
