Instructions

Step 1
Line a round 6 inch pan with parchment paper. Preheat the oven at 220°C.
Step 2
Using a spatula, press the soften cream cheese.
Step 3
Add the sugar in 2 batches. Cream the sugar and cream cheese until well incorporated.
Step 4
Using a whisk, add in the egg yolk. Whisk until blended.
Step 5
Whisk in the eggs one at a time. Ensure that the egg is well incorporated in the mixture.
Step 6
Sift in the cornstarch and whisk it in the batter thoroughly.
Step 7
Add in the heavy cream. Whisk until fully incorporated.
Step 8
Bake at 220°C for 20 minutes. After 20 min, slightly open the oven door for 8 minutes before taking out the cheesecake.
Step 9
Let it cool at room temperature. You can refrigerate or serve it after cooling.
