Instructions
Step 1
Preheat the oven to 220°C and cover a baking tray with baking paper.
Step 2
Peel the kohlrabi and cut into fries (see tip). Arrange on the baking tray and drizzle with olive oil, salt and black pepper. Slide into the oven for 20-25 min, until the fries are nicely golden brown. Toss once halfway through.
Step 3
Tartare: finely chop the chives and mint. Cut the apple and beetroot into 0.5 cm cubes and finely chop the shallot. Cut the mackerel into small pieces. Mix the mackerel, mint, chives, shallot, apple and beetroot together with the yoghurt. Season with the mustard, some lime juice, salt and black pepper.
Step 4
Serve the mackerel tartare with the kohlrabi straws. Enjoy!
