Instructions
Step 1
Put dates in medium bowl

Pour hot water on top of dates

Add baking soda and stir slightly – Mixture will foam up

Add oatmeal and buttermilk
Step 5
Set aside to cool

Cream oil, sugar, and eggs

Add salt and vanilla

Add flax seed meal, ½ of the date mixture, oat bran, the rest of the

date mixture, and almond meal. Stir in flour – omit if mixture seems

dry.
Step 11
Stir in walnuts and chocolate chips.
Step 12
Grease muffin tins and put ¼ c. of batter in each cup. Makes 24.
Step 13
Bake at 350 for 12-15 minutes.(Should be slightly brown, but still moist inside. Don’t overcook.)
Step 14
Store in freezer or refrigerator.
