Alexa’s Chicken Adobo

- Any dark meat works but white meat will be a significant difference
- Variations
- Use whole peppercorns
- Incorporate pork
- Use sugar cane vinegar (Dati Puti brand) but this is stronger than ACV so beware
- Add coconut milk (“Adobo sa Gata”)
- Add no-sodium chicken stock instead of water
- Add potatoes
- Add 1 Tbs brown sugar
- Add 1 sliced thai chili

Ingredients

4 lbschicken thigh
note that they will shrink due to the braising, boneless, or bone-in skin removed
½ cupdark soy sauce
This can vary heavily based on how salty yours is
¼ cupvinegar
mild, i prefer apple cider vinegar
5 clovesgarlic
crushed or finely minced
1Onion
Small, minced
Black pepper
Bay leaves

Instructions
Step 1
1. Optional: Sauté onion and garlic to lightly brown in a separate pan
Step 2
2. Preheat oven to 300F/150C
Step 3
3. Add chicken to braising pot
Step 4
4. Add 1/2 cup soy sauce, 1 cup water. The liquid should cover about 70% of the chicken. If not, add more soy sauce or water

5. Add onion/garlic and 2-5 bay leaves. Season generously with black pepper.

7. Braise for 2-3 hours until chicken is tender, after the first 2 hours, the heat can be reduced to as low as 200F. I’ve braised it for as long as 5hrs with good results.

8. Top with green onions (optional) and serve with rice
