Lime and Cilantro Braised Pork Shoulder

I am a huge fan of cooking more than you need one day to make easier work of a meal later in the week. Purchase a good sized boneless pork shoulder for this dish - a 5-6 lb roast will serve a family of 4 very well for 2 meals. Buy 2 smaller roasts if you like but don’t scrimp on the size, you’re going to want substantial leftovers. Pork is affordable, can be cooked very well with this hands off braising method and takes on flavours like a sponge. The lime and cilantro flavours make for a bright and mediterranean dinner and work equally well for Vietnamese flavours of banh mi later in the week. Swap the pork for our rotisserie chicken recipe (use the Cuban marinade) - 2 chickens 3-5 lbs each will get you through Sunday dinner and provide for Banh Mi.

Instructions

Step 1
Preheat the oven to 270F
Step 2
Season pork all over with salt and pepper.
Step 3
Heat oil in a dutch oven over high heat.
Step 4
Sear the pork roast on all sides, creating a crispity browned crust on all surfaces. Don’t forget the ends.
Step 5
Once browned add lime juice, chicken stock, red pepper flakes, garlic and onion to the pot.
Step 6
Lay a generous handful of cilantro on top of the pork roast.
Step 7
Cover with a lid and place in the oven to braise for 4 ½ - 5 hours.
Step 8
Remove from the oven and remove the pork from the pot. Discard the cilantro and use a slotted spoon to remove garlic and onions from the braising broth. Allow the pork to rest for 15-20 minutes while reducing the jus.
Step 9
Place the broth over high heat and allow it to reduce by half. Scrape the sides and bottom of the pot and remove any remaining bits of garlic, onion or pork.
Step 10
Slice half of the roast for tonight’s meal and place the remaining roast in a storage container marking the lid “for Banh Mi”
Step 11
Serve with reduced jus as a gravy.
