Low Carb Instant Pot Yogurt

This easy recipe creates a thick and creamy yogurt. NOTES: * You must use ultra-filtered or ulta-pasteurized milk since this is a cold-start recipe (i.e., this recipe doesn't call for boiling the milk to kill bacteria). * You can use any yogurt starter of your choosing. If you can't find a plain version of your preferred starter, purchase an unblended or fruit-on-the-bottom flavor and use the plain yogurt on top for the starter. You can also freeze any yogurt remaining in the container for up to 3 months to use in your next batch. I buy little condiment cups with lids, put 2 tbsp of the starter in each cup, and freeze. * You can also use any sweetners of your choosing. If you are not concerned about sugar, you can use sweetened condensed milk. If you want more of a savory yogurt, you don't have to use any sweetner. * It is highly recommended that you sterilize your instant pot as the yogurt will absorb any tastes and smells present. I use a dedicated lid seal for yogurt making (they can be purchased separately on Amazon). * You can incubate the yogurt for between 7-10 hours - the longer, you incubate, the more tart the yogurt. Different milks might take longer to set up. Check the consistency at the end of incubation and add more time to the timer as needed. 8 hours is usually good for Fair Life. * I like to serve my yogurt mixed with a couple tablespoons of Good Good no sugar added jam. It comes in a variety of flavors.

Instructions

Step 1
Whisk 1/2c of milk with yogurt starter in a small bowl until yogurt is dissolved, then pour into instant pot.
Step 2
Add sweetner and 1 cup of milk into instant pot and whisk until dissolved.
Step 3
Add remaining milk into instant pot and whisk until well combined.
Step 4
Lock instant pot lid and press the yogurt button (normal setting). Set timmer for 8 hrs.
Step 5
After 8 hours, take liner out of the instant pot and cover with a lid or plastic wrap and refridgerate for 8 hours. Do not stir or distrub.
