If you love blue cheese like I do, this is a sandwich you have to try! It's a quick and easy sandwich that takes just 5 minutes and has a ton of textures and flavors. Use leftover rotisserie chicken to make it simple and easy!

chilled
2 Tbspmayo
2 tspwhite vinegar
1celery rib
diced
¼ cupcraisins
1 tspsalt
1 tsppepper
½ Tbspdry parsley
¼ cupblue cheese crumbled
4 slicesbutter lettuce

Dijon Mayo Sauce
Instructions
Step 1
In a bowl mix together your rotisserie chicken, mayo, vinegar, celery, craisins, salt, pepper and parsley.

Step 2
Add in your blue cheese and give another mix.

Step 3
In a small bowl mix together the additional mayo, dijon, salt and pepper.

Step 4
Take your sourdough bread and slice in half (don't slice all the way through so you can keep your sandwich intact).

Step 5
Spread your sauce on the bottom half of your bread. Then add your butter lettuce slices and your chicken salad mix.

Press it all together, slice in half and enjoy!
