Refreshingly sweet potatoes!

Step 1
Wash the sweet potatoes and pierce them all around with a fork.
Step 2
Put them in a big pot with water and set it to high. Let the potatoes cook for about 30 minutes, including the time it takes for the water to boil.
Step 3
Preheat oven to 475 degrees.
Step 4
Cut the potatoes into rounds, peel them, and then slice the rounds into quarters.
Step 5
In a roasting pan, put a layer of sweet potatoes. Coat them with the fresh-squeezed lime juice. Then, coat them in maple syrup.
Step 6
Roast the potatoes with just these two ingredients for the first 15 minutes. Prepare the glaze while this is happening.
Step 7
In a microwaveable bowl or saucepan, combine all other ingredients and warm until melted.
Step 8
Drizzle the glaze over the sweet potatoes in the oven. This is the step where they become candied yams.
Step 9
Let them cook uncovered for 30 more minutes. Then, cover them with aluminum foil for the remaining 15 minutes.
Step 10
Enjoy! You may add a dried herb as garnish, but no need!
