Instructions

Step 1
Roast turkey parts, onions, celery, and carrots in roasting pan. Sprinkle in oil and salt. Toss until evenly coated.

Set oven-smoker at 400°
Step 3
Roast for approximately 2 hours, turning half way
Step 4
Transfer to stock pot, add chicken broth, thyme, and bay leaf. Bring to boil. Reduce heat and simmer for 1 hour.
Step 5
Strain liquid from solids, should yield r cups od stock.
Step 6
Melt butter in large sauce pan. Once butter begins to foam, add flour and cook, stirring, until lightly golden, about 2 minutes.
Step 7
Pour in 1 cup of stock and whisk until smooth. Slowly add remaining stock and whisk until boiling and thickened, about 5 minutes. Add pepper and remove from heat.
