Instructions
Step 1
Preheat oven to 350. Grease 1 large loaf pan. Set aside.
Step 2
Sift dry ingredients together (flour, cinnamon, salt, and baking soda). Set aside.




Step 3
Shred carrots to make 1 1/2 cups - about 3 small carrots.

Step 4
Chop nuts. Set aside.

Step 5
Beat oil and sugar. Add eggs, one at a time, beating well after each addition.



Step 6
Add flour mixture and blend on low speed just to mix.
Step 7
Add carrots, blend.
Step 8
By hand, stir in nuts.
Step 9
Pour into loaf pan. Bake 50 minutes or until toothpick inserted into center comes out clean.
Step 10
Cool 10 minutes on rack before removing from pan. Cool wrap and store in plastic wrap.
