Leftover Mashed Potato Croquettes

Ingredients
12 servings
3 cupspotatoes
cold mashed
½ cupflour
1 cupsshredded cheese
depends how cheesy you like them
5 stripsbacon
cooked crumbled
3scallions
chopped
2eggs
¼ tspsalt
¼ tsppepper
1 tspgarlic powder
1 tsppaprika
1 cuppanko breadcrumbs
Vegetable oil
or fry oil of choice, enough to fill a pot a couple of inches to fry the croquettes
Instructions
Step 1
1. Combine all ingredients
Step 2
2. Roll into 2” balls and coat generously with Panko. Refrigerate 30 min.
Step 3
3. Heat veg oil to 380° (or desired frying oil). Fry 1-2 min each side
Step 4
4. Remove to paper towels to drain
