Instructions
Step 1
1. Combine cream, milk, shallot, rosemary, salt, and pepper in a saucepan. Heat until near boiling, then set aside.

2. Preheat oven to 190C. Grease a 20cm x 20cm baking tin with butter.
Step 3
3. Layer potatoes in the tin, sprinkling salt, pepper, and Gruyère cheese between each layer. Pour half of the cream mixture over the layers when halfway filled.

4. Continue layering until all potatoes are used, then add the remaining cream mixture and sprinkle the remaining Gruyère cheese on top.
Step 5
5. Cover with parchment and aluminum foil. Bake for 1.15h-1.5h.
Step 6
6. Check if potatoes are cooked, remove foil and parchment, increase temperature to 200C (fan), and bake for an additional 10-15 minutes or until golden.
Step 7
7. Sprinkle finely chopped rosemary on top before serving. Enjoy!
