Instructions

Step 1
Preheat your oven to 400F.
Step 2
Use a mandolin or thinly slice your potatoes. Dice your garlic and shallot.
Step 3
Add your sliced potatoes to a baking dish. Nest the garlic and shallot into the nooks of your potatoes.
Step 4
Add butter, boursin cheese, blue cheese, and milk to a medium saucepan. Bring to medium-low heat. Sir until smooth.
Step 5
Pour your cheese mixture over your potatoes. I ended up stirring the potatoes to ensure they were fully coated.
Step 6
Bake for 1 hour. At various intervals, I would stir the potatoes so that none of the protruding potatoes would burn.
