Instructions

Step 1
1. Preheat the oven to 375°F (190°C).
Step 2
2. Boil or steam the bell pepper halves until slightly tender, about 5 minutes.
Step 3
3. In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, 1/2 cup of shredded cheese, cumin, chili powder, salt, and pepper.

4. Stuff each bell pepper half with the quinoa mixture.
Step 5
5. Sprinkle the remaining cheese on top of the stuffed peppers.
Step 6
6. Place the stuffed peppers in a baking dish and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Step 7
7. Garnish with fresh cilantro before serving.
