Cherry Cheesecake Brownie Bites

These are so delicious, the perfect sweet bite. It makes a lot, great for a holiday party and can be made ahead of time to save you time.

Instructions

Step 1
Preheat oven to 350°F.
Step 2
Prepare brownie mix according to the package directions.
Step 3
Prepare a mini muffin pan with mini liners or spray with nonstick spray, if metal. If it’s silicone you won’t need to spray it.
Step 4
Add 1/2 tablespoon of brownie batter to each mini muffin cup.
Step 5
Bake 16-20 minutes. Set aside to cool.
Step 6
Meanwhile prepare the cheesecake filling.
Step 7
In a bowl using an electric mixer whip the cream cheese until smooth. Add the sugar, sour cream, lemon juice, vanilla extract and mix on medium until fluffy, about 3 minutes.
Step 8
In a separate bowl whip the heavy cream on medium high until peaks form, about 3 minutes.
Step 9
Gently mix together the heavy cream and cream cheese mixture.
Step 10
Spoon or pipe the cream cheese mixture on top of the cooled brownies. Refrigerate at least 6 hours, or over night. Remove the brownie cheesecake bites to a serving dish.
Step 11
Before serving spoon a small amount of Lucky Leaf cherry pie on top of each cheesecake and serve immediately.
