Creamy sausage and butter bean cassoulet

Instructions

Step 1
Preheat oven to 200 fan
Step 2
Heat a drizzle of oil over medium heat until hot, add sausage meat and fry until browned, 4-5 minutes
Step 3
Break it into 10 even size pieces as it cooks
Step 4
Add the sausage to a baking dish with the beans, Cajun spice, crème fraiche, chicken stock and sugar and cook on the top shelf and bake 20-25 minutes until thickened and bubbling
Step 5
Remove from the oven and stir through the spinach until wilted and hot, 1-2 minutes. Add a splash of water if needed. Serve with a mix of wild and brown rice
