Instructions
Step 1
Pre heat the oven to 220c gas mark 7 200 fan oven
Step 2
Take the top off the bulb of garlic and place in some tin foil with a splash of olive oil and a sprinkle of sea salt. Scrunch the foil at the top and place at the bottom of the oven for 20-30 minutes or until the garlic is soft and roasted
Step 3
In a pan or casserole dish, cook the sausages in a little oil until browned on all sides and set a-side
Step 4
In the same pan, cook the onions on a medium heat until soft
Step 5
Add the vinegar, chopped tomatoes, water, sugar, and Puréety Sausage Casserole seasoning and stir well before bringing to a simmer
Step 6
Squeeze out the garlic from the roasted bulb and mix into the the pan. Add the butter beans and cherry tomatoes and simmer for 10-15 minutes then add the sausages
Step 7
Combine the breadcrumbs, parsley and parmesan (either blend or mix in a bowl). Then transfer the sausage casserole into a dish or oven proof tray and top with the herby crust, allowing some of the sausages to stick out slightly
Step 8
Bake for 10-15 minutes or until crispy - serve and enjoy!
