Chocolate Chip Cookie Bars

Instructions

Step 1
Lightly grease your 9 x 13 inch baking tin and line with a strip of parchment paper that overhangs the long sides, securing it in place with metal clips.
Step 2
Place the butter and sugar in a large bowl and beat with an electric mixer until light and fluffy, about 5 minutes. Add the vanilla and beat to combine. Add the salt, oat flour and chocolate chips and mix until a dough forms. Scrape it into the prepared tin and press into an even layer. Refrigerate while you make the topping.
Step 3
Melt the chocolate, either in a microwave, using short bursts of heat to prevent it from burning, or in a heatproof bowl set over a pan of simmering water (ensuring that the bottom of the bowl doesn’t touch the water). Remove from the heat, add the butter and stir together until smooth. Pour the chocolate mixture over the dough in the tin and spread evenly. Refrigerate for 2 hours, or until set.
Step 4
Use the parchment paper to transfer the chilled slab to a board, then use a fine sharp knife to cut it into 12 pieces.
Step 5
If stored in a sealed container and refrigerated, these bars will keep for at least a week.
