Instructions
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat.
Step 2
Add onion, carrots, celery, and garlic and cook for 5-7 minutes, or until softened.

Add chicken and cook for 7-10 minutes, or until browned.
Step 4
Add chicken broth and bring to a boil.
Step 5
Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
Step 6
Stir in peas and parsley.
Step 7
Remove from heat and stir in cheese until melted.
Step 8
Season with salt and pepper to taste.
Step 9
Serve immediately.
