Ingredients

2 ½ cupsbananas
ripe, the one with all the ugly spots are the best
½ cupbutter
melted
¾ cupbrown sugar
1 tspvanilla
2eggs
2 cupsflour
¼ tspsalt
1 tspbaking soda
¼ cupcranberries
chopped, optional
¼ cupwalnuts
chopped, optional
1 Tbspbutter
to grease pan
Sugar Coated Cranberries
⅓ cupsugar
½ cupwater
¼ cupsugar
to coat
½ cupbutter
softened
8 ozcream cheese
softened
1 tspvanilla
3 cupspowdered sugar
1 Tbspheavy cream
or milk, start off with 1
Instructions
Step 1
Combine the dry ingredients (flour, salt, baking soda) and stir together. In a bowl, melt butter then brown sugar and vanilla and cream together. In a separate bowl, mash bananas, eggs and the butter mixture together. Pour your wet mixture (bananas/buter) into the dry ingredients (flour) with cranberries and walnuts then mix thoroughly. Grease your bread pan with butter then pour in the batter and bake at 350 degrees for 1 hour to 1 hr 15 min (depends on your oven, use a toothpick to poke it, if it comes out clean, it’s ready) Let it cool.
Step 2
In a small sauce pan, on medium heat, combine sugar and water and let the sugar dissolve. Add cranberries then sift them out and coat them with granulated sugar.
Step 3
Make the cream cheese frosting by adding softened butter, softened cream cheese, vanilla, powdered sugar and heavy cream. Using a hand mixter - mix until it’s smooth and creamy. If it’s too thin, add more powdered sugar, too thick, add heavy cream.
Step 4
Frost the banana bread and top with the sugared cranberries.
