Instructions
Step 1
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2
In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
Step 3
In another large bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract, and beat well.
Step 4
Gradually mix in the dry ingredients until just combined.
Step 5
Fold in the chocolate chips.
Step 6
Drop tablespoons of dough onto the prepared baking sheet.
Step 7
Press some crushed peppermint candies into the top of each cookie.
Step 8
Bake for 9-11 minutes, until the cookies are set but still soft in the center.
Step 9
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
