Ingredients
6 servings
1 x 10 ouncespring mix
or spinach
1 x 11 ouncecan mandarin oranges
½ cupdried cranberries
⅓ cupalmonds
sliced, can use walnuts or pecans as well
¼ cupfrozen orange juice concentrate
don't add water
½ teaspoonorange zest
¼ cupolive oil
or vegetable oil
2 Tablespoonsgranulated sugar
1 Tablespoonvinegar
I used apple cider vinegar
0.5 Tablespoonlemon juice
1 teaspoonpoppyseeds
¼ teaspoonkosher salt
Instructions
Step 1
In a large bowl, toss the spring mix, mandarin oranges, cranberries, and almonds until combined.
Step 2
In a mason jar, add the orange juice, orange zest, olive oil, sugar, vinegar, lemon juice, and salt. Shake until well combined. Add the poppyseeds and shake just before serving.
Step 3
Pour dressing over the salad. Toss until well coated.
