Coconut Milk
Not only is this coconut milk easy to make, but it is also delicious! It is important to avoid added thickeners in the first phase of the Endometriosis Diet Plan. Most store-bought coconut milks contain ingredients such as guar gum that may worsen your symptoms.
Tips:
Use full-day, not reduced-fat, coconut flakes.
It is best to use filtered water to avoid ingestion of chlorine and other contaminants. Chlorine can be irritating to your gut and add to your toxic load.
Refrigerate for up to 3 days.

Instructions
Step 1
Divide coconut flakes between 2 jars (1L ea.) and pour in boiling water. Let stand for at least 1 hour, until softened, or up to 4 hours.

Step 2
Pour the contents of 1 jar into the blender and blend on high for 2 minutes. Strain through nut bag or cheesecloth into a clean jar. Repeat with the remaining jar.

Step 3
Divide the vanilla between jars, seal and shake to combine. Serve immediately or store in the refrigerator for up to 3 days.
