Easy Brown Butter Butterscotch Cookies are so easy to make! You can make them thin and crispy or soft!

Step 1
Brown the butter. Place butter in a saucepan or skillet over medium heat and cook until melted. Butter will sizzle and pop, then become foamy. Once it becomes foamy the brown flakes will form, remove the butter from heat and pour into a large mixing bowl. Allow to fully cool. Around 1 hour.
Step 2
Preheat oven to 350F and line a baking sheet with parchment paper or a baking mat.
Step 3
Once butter has fully cooled, add sugars and beat butter and sugar until creamy and well-mixed.
Step 4
Add the egg and vanilla extract and beat again until mixed
Step 5
In a separate bowl, whisk together flour, baking soda, and salt. Then stir dry ingredients into butter mixture.
Step 6
Stir in butterscotch baking chips until combined.
Step 7
Using a tablespoon scoop the cookie dough and make it level to 1 tablespoon then drop onto prepared baking sheet, spacing cookies at least 2” apart. Transfer to center rack of 350F oven and bake for 10 minutes. Look for golden brown edges. Then the cookies are ready!
Step 8
Allow cookies to cool completely. They will be chewy in the middle and crispy on the outside. Enjoy!
