Prepare the crumble
Step 1
Using your hands, crumble the soft butter with the flour, sugar, and almond flour. You can adjust the size of your crumble pieces by crumbling more or less. Set aside for topping the muffins later.
Make the muffin batter
Step 2
Preheat the oven to 350°F (180°C). Mix the dry ingredients: In a mixing bowl, combine the flour, baking powder, baking soda, and salt.

Whisk the wet ingredients: In another bowl, whisk the eggs with the sugar until pale. Add the melted butter, vanilla extract, and milk, and mix well.
Step 4
Add the diced peaches to the flour mixture and stir lightly.
Step 5
Pour the wet ingredients into the dry ingredients and stir just until combined—be careful not to overmix.
Step 6
Pour the batter into greased and floured muffin molds, or use muffin papers. Sprinkle the prepared crumble mixture over each muffin.
Step 7
Bake in the preheated oven for about 20 minutes, or until the muffins have risen and are golden brown. Serve and enjoy!
