Step 1
Preheat the oven to 350° with convection. Spread bacon on a baking sheet, and roast until golden brown, crisp and fat is rendered, 10 to 12 minutes. Drain on paper towels (keep warm).

Place potatoes on a baking sheet, and roast until easily pierced with the tip of a knife, 1 to 1 ½ hours.

Working with one potato at a time, immediately wrap potatoes in a clean kitchen towel and slam down onto a countertop (this ensures a light, fluffy texture).

Slash potatoes to open, season with salt and pepper, and top generously with butter.
