2flax eggs

15medjool dates
pitted

2bananas
medium-sized, very ripe

2apples
organic, or pears, diced into small pieces

½ cupapplesauce
no sugar added

2 tablespoonscashew butter
raw

1 ¼ cupalmond flour

1 cupwhole-wheat flour
or oat flour

1 tablespooncinnamon

1 teaspoonnutmeg

2 teaspoonsbaking powder

1 tablespoonarrowroot powder
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
In a cup or small bowl, mix ground flaxseeds with non-dairy milk to create flax "eggs." Let this mixture sit for a couple of minutes. Set aside.
Step 3
Soften dates by soaking them in water and heating in a microwave for 30 seconds. Drain the water and add the dates to food processor with the flax "eggs," bananas, applesauce, raw cashew butter, spices, baking powder and arrowroot. Process until smooth and creamy.
Step 4
Add almond flour and process until smooth. Then add whole-wheat flour (or oat flour) and again, process until smooth. Pour the dough into a large mixing bowl. Add in desired amount of diced apple (or pear) and stir into the batter evenly.
Step 5
Place baking cups in a muffin tin and spoon in muffin batter. You can make medium-sized muffins by filling the cups three quarters of the way or make larger muffins by filling cups all the way up.
Step 6
Bake for 18 minutes or until you can place a fork or toothpick on top and it comes out clean. Let cool for at least 10 minutes.
