Instructions
Step 1
Separate the egg yolks from the egg whites and add them to a bowl. Whisk them together with the sugar until creamy and fluffy (about 3 or 4 minutes)
Step 2
In a pot on medium heat, add the milk, cream, salt and nutmeg and stir, bringing to a gentle simmer.
Step 3
Turn the heat off and temper the egg and sugar mixture. Do this by adding 1tbsp of the hot mixture to the eggs and whisk. Repeat 3 or 4 times until you can add a little more of the liquid and slowly add it all.
Step 4
Bring the entire thing back into a pot and on the stove on medium heat. Bring to a simmer and let it cook for 5 minutes. Strain back into a bowl and add the vanilla extract and the optional rum.
Step 5
Leave it in the fridge for at least 1 hour and serve with a dusting of cinnamon. Enjoy!
