Instructions

Step 1
Heat up milk in a medium sauce pan over medium/low heat.
Step 2
Add in the cinnamon sticks, ground cloves and vanilla. Stir the ingredients together and allow to heat up.
Step 3
In a separate bowl add the egg yolks and sugar and whisk together until thick and creamy.
Step 4
Increase the stove temp to medium/high and pull out the cinnamon sticks (do not discard but set aside in order to add to the drink later for a stronger cinnamon flavor).
Step 5
As the milk mixture temperature rises you want to temper the egg mixture by whisking the milk mixture into the eggs very slowly. Once fully mixed return to the sauce pan and whisk over the heat for three minutes.
Step 6
Take the sauce and pour into a container to let cool to room temperature for about one hour. If you want to intensify the cinnamon flavor then add cinnamon sticks back to the mixture.
Step 7
Once cooled add the heavy cream, 2 tsp vanilla and nutmeg. Mix thoroughly.
Step 8
If the taste is too rich or the texture is too thick then add a little bit of milk.er chill in the fridge for a couple of hours and serve.
