Chicken and Chorizo Baked Rice

Ingredients

50gchorizo
diced

500gchicken
diced

1onion
finely diced

4cloves garlic
grated

2 Tbsplain flour

200mlmilk
warmed

300mlchicken stock
hot

1 tspmustard
optional

½ Tbsgarlic granules

1 tspparsley

1 tspdill

1 Tbschives
I used fresh

166grice

120gcheese
l used a mix of cheddar, Red Leicester and mozzarella, grated

salt
to taste

pepper
to taste

Instructions
Step 1
Cook rice according to its instructions. 166g uncooked rice should be approximately 500g when cooked
Step 2
Add the chorizo in to the pan and cook until the oils are starting to come out

Step 3
Add in the diced chicken and season to taste

Step 4
Once the chicken has browned add in the onions and cook until soft, then add the garlic and cook for around 30 seconds


Step 5
Add in the flour and cook out for a few minutes

Step 6
Slowly add in the stock and milk, bit by bit, stirring continuously. Cook until it's formed a thicker sauce


Step 7
Add in the seasonings and mustard and season to taste





Step 8
Combine the rice with the cooked chicken mix
Step 9
Transfer the mix to an oven safe dish, grate the cheese on top and bake at 180 degrees for 10 minutes or until the cheese is golden
Step 10
Garnish and serve
