Classic eggs Benedict but smothered in chili

Instructions
Step 1
Soft boil 4 eggs (7minutes).
Step 2
Set eggs into ice bath immediately after finished cooking.
Step 3
Heat prepared chili in sauce pan.
Step 4
Prepare the Hollandaise sauce according to the recipe and set aside. Toast the English muffins and you're ready to assemble.
Step 5
Place toasted English muffin down, add a poached egg on top, smother in chili, add hollandaise over the top. Garnish with green onion. Repeat with the remaining ingredients before serving warm.
