Instructions
Step 1
Melt 2 tsp flora Light.
Step 2
Whisk 3 egg yolks with 2 tsp quark, 1 tsp lemon juice, a pinch of salt, paprika, and mustard powder.
Step 3
Bring a pan of water to boil then turn down to simmer.
Step 4
Put egg mixture in a heatproof dish over the pan of water.
Step 5
Whisk until thickened, then add melted butter and season with salt and white pepper.
Step 6
Serve immediately on toasted wholemeal English muffin with ham, chives, and paprika.
