Instructions
Step 1
Preheat oven to 180°c and line a baking tray.
Step 2
Slice chicken breasts in half, cover in baking paper, and hit with rolling pin/something heavy.
Step 3
Place the flour in a bowl, the egg in a bowl and the bread crumbs and seasonings in a bowl.
Step 4
Coat the chicken in the flour, then egg and finally the bread crumbs. Place on the baking tray.
Step 5
Drizzle with olive oil and bake for 35 minutes, flipping half way.
Step 6
Once chicken is cooked, slice your bread rolls in half, add on the cheese and place under the grill for 3-5 minutes or until the cheese has melted.
Step 7
Add the lettuce, chicken, tomato slices, red onion and mayo onto the rolls and season with salt and pepper.
