Instructions

Step 1
Place the pine nuts, fresh basil, shallot, jalapeño, garlic, and chopped green onions in the bowl of a food processor. Add the lime juice followed by the olive oil and vinegar. Sprinkle in the salt and Parmesan cheese.

1/4 cup pine nuts, 1/2 cup fresh basil, 1 small shallot, 1/2 jalapeño, 2 garlic cloves, 2 Tablespoons green onion, 2 squeezed limes, 1/3 cup extra virgin olive oil, 2 Tablespoons seasoned rice wine vinegar or white wine vinegar
Step 3
Pulse until the mixture is smooth and well combined, stopping to scrape down the sides as needed.
Step 4
Add the chopped lettuce to a large mixing bowl followed by the cucumbers and green onions.
Step 5
1 head leafy lettuce, 2 large cucumbers, 6 green onions
Step 6
Pour the dressing on top, and gently toss to combine and coat everything with the dressing.
Step 7
Serve immediately.
