oops, forgot the recipe before! let’s try again! herby lemon salmon with parmesan roasted broccoli! perfect for a quick, healthy din. roasting salmon with citrus is probably my favorite way to make it, and you can even slice up some oranges to use along with it! 🍊🍋 RECIPE (serves 2) Salmon 2 lemons, sliced 1 lb salmon ½ shallot, thinly sliced 1 small fresno chile, thinly sliced Olive oil Salt & pepper Broccoli 1 head of broccoli Olive oil Salt and crushed red pepper 1/4 cup grated Parmesan cheese Lemon Herb Sauce 2 tbsp chopped parsley 2 tbsp chopped dill 2 cloves garlic, minced 2 tbsp olive oil Juice of 1 lemon (can use 2 if you want it really citrusy!) Preheat oven to 400 F. Add lemon slices to the bottom of a medium baking dish. Top with shallots and Fresno chiles, drizzle with olive oil, and season with salt and pepper. Line a separate baking sheet with parchment paper. Cut broccoli crosswise into slices. Add to the baking sheet, drizzle with olive oil, and toss in salt, pepper, and crushed red pepper. Transfer both the salmon and the broccoli to the oven, and cook for 15-20 minutes or until salmon is cooked all the way through and easily flakes with a fork and broccoli is just starting to crisp. While everything is roasting, create the herby lemon sauce by whisking together everything in a small bowl. When broccoli is ready, sprinkle on Parmesan. Serve salmon topped with herby lemon sauce and broccoli on the side.

Instructions

Step 1
