Butter Chicken Bake Meal Prep π¨βπ³ π₯
This single serve glass bowl meal prep is such a game changer and I canβt believe how easy it is to make!
I highly recommend you give this butter chicken inspired version a go π€€
Ingredients (for one serve):
50g x raw basmati rice π
150g x lean boneless chicken breast (diced)
50g x Greek yoghurt
75g x Butter chicken sauce (Sharwoods)
75ml x chicken stock
1/2 cup x chopped cauliflower
A handful of Cherry tomatoes
Optional toppings when serving:
Greek yoghurt
Parsley

Step 1
*Optional: marinate your chicken in a bowl with the Greek yoghurt and butter chicken sauce for a few hours before baking.
Preheat the oven to 180 Degrees Celsius.
In a glass meal prep container add your rice, chicken, butter chicken sauce, stock, tomatoes and the cauliflower. Mix until everything is well combined.
Cover and bake in the oven for around 40 minutes or until itβs cooked.
Let cool and store in the fridge!
Optional: when serving add yoghurt and parsley. Serve with papadums or naan!
