Instructions

Step 1
Preheat over 425.
Step 2
Line rimmed baking sheet with parchment paper. Combine chili powder, pepper, cumin, paprika, and garlic powder into bowl and mix well. In separate bowl, add bell peppers, onion, and chicken, sliced into strips. Drizzle with oil and then toss with chili powder mixture.
Step 3
Place onto baking sheet and cook for 30 minutes.
Step 4
Time to make cashew sour cream. Add cashews, salt, apple cider vinegar, lemon juice, and water to blender or food processor. Blend until smooth. Add water if too thick.
Step 5
Take chicken and veggies out of the over and serve over chopped spinach. Drizzle with cashew sour cream. Squeeze lime juice over everything.
