Oven Baked Peruvian Chicken

This is a very tasty recipe. If you cook it just right the texture of the chicken becomes like pulled pork. Enjoy! *Typically I do this recipe on the grill or smoker.

Instructions

Marinade for Chicken:

Step 1
Blend all ingredients for chicken

Aji Amarillo pasteAji Amarillo paste2 tablespoons
cumincumin3 teaspoons
paprikapaprika1 teaspoon

black pepperblack pepper1 teaspoon

Step 2
Put chicken in a Ziplock freezer bag and marinate overnight.

Green Sauce:

Step 3
Blend all ingredients to desired consistency but add the olive oil slowly at the end.

Directions:

Step 4
Preheat oven to 450 degrees.
Step 5
Put chicken in a baking pan or roasting pan. Roasting pan works better but i did a baking pan this time.
Step 6
If using baking pan put 1 cup of chicken broth in with the chicken.
Step 7
If using roasting pan put 1 cup of water in the pan.
Step 8
Cook for 20 minutes then flip the chicken. Baste the chicken.
Step 9
Cook a additional 20 mins.
Step 10
Serve with Green Sauce drizzled all over the chicken.
