Instructions
Step 1
-Pour your couscous into a bowl with stock and cover with boiling water and a plate for 5 minutes then fluff through

-Add to your prepared pomegranate seeds, mint and coriander, olive oil and lemon and season to taste

-For the koftes, mix your plant-based mince with the listed ingredients and shape into sausages

-Fry in a hot pan in a little oil until golden and crisp
