250mlwater

1 tspveg stock
or vegan chicken stock

1juice of lemon

1 Tbspolive oil

For the kofte

250gplant-based mince

1onion
diced

1clove garlic

Instructions
Step 1
-Pour your couscous into a bowl with stock and cover with boiling water and a plate for 5 minutes then fluff through

Step 2
-Add to your prepared pomegranate seeds, mint and coriander, olive oil and lemon and season to taste



Step 3
-For the koftes, mix your plant-based mince with the listed ingredients and shape into sausages








Step 4
-Fry in a hot pan in a little oil until golden and crisp
Step 5
-Serve over couscous salad and dollop some yoghurt on top with a sprinkle of paprika
