Instructions
Step 1
In a big pot, add the two cans of chickpeas with their water, and cover with some extra water if necessary (the liquid needs to just about cover the chickpeas). Bring the pot to a boil and reduce to a simmer, cooking for 20-25 minutes (until chickpeas are super tender)
Step 2
Set your oven to the broiling setting. Tear the half loaf of bread apart with your hands into 1 inch chunks. Put them on a tray and add some olive oil on top, before broiling for 5 minutes (but keep checking it as it burns easily)
Step 3
Chop the onion and garlic finely. To a pan on medium-high heat, add the olive oil and the onion and garlic. Cook for a couple of minutes until sweating and add the cumin, coriander, paprika and salt. Cook for another 5 minutes
Step 4
Now that the chickpeas are tender, add to the same pot the seasoned onion and garlic, the harissa, the lemon juice and the chopped parsley. Stir everything in and the stew is ready to serve
Step 5
Assemble by placing bread on the bottom of the plate, the stew over it and garnish with some parsley and lemon wedges
