Instructions
Step 1
Heat oven to 350° (mod.).
Step 2
Boil macaroni in salted water, then drain and set aside.
Step 3
Melt butter over low heat in heavy saucepan.
Step 4
Add flour, salt, pepper, garlic, mustard powder and paprika, and stir continuously until it bubbles and is fragrant.
Step 5
Slowly add in milk, stirring constantly. Bring to a boil, and allow to boil for 1 full minute, still stirring.
Step 6
Remove from heat and fold in chopped cheddar. Be careful at this stage, the sauce can become grainy if it is too hot when the cheese is added.
Step 7
Stir half of cheese sauce into macaroni.
Step 8
Layer grated cheese and macaroni in a baking dish, beginning and ending with the cheese.
Step 9
Pour remaining sauce over all, and bake for 35-45 minutes, or until bubbling and golden brown on top.
