2 tablespoonsextra virgin olive oil
1onion
medium, diced
2garlic cloves

2 lb93% lean ground turkey
kosher salt
freshly ground black pepper
2 tablespoonsras el hanout
2 tablespoonschili powder
1 teaspoonground cinnamon
1 teaspoonground cumin
1 teaspoondried oregano
2 cupschicken broth
2 tablespoonstomato paste
2sweet potatoes
peeled and cut into 1/4 in pieces
0.5red bell pepper
cut into half inch chunks
0.5yellow bell pepper
cut into half inch chunks
2celery stalks
cut into half inch pieces
1zucchini
cut into 1-in cubes
1can chickpeas
drained in rinse
12 ozcan of cannellini beans
drained and rinsed
28 Ozcan diced tomatoes with juices
red pepper flakes
optional
½ cupfresh cilantro
chopped, for garnish
Instructions
Step 1
In a slow cooker or large skillet warm the olive oil over medium high heat. Had the onion and garlic and cook, stirring, until the onion is translucent, 5 to 7 minutes. And the ground turkey and cook, stirring, until lightly browned, 6 to 8 minutes. Season with salt and black pepper. Turn the slow cooker to low add the ras el hanout, chili powder, cinnamon, cumin, and oregano and start into the meat, letting it all absorb. Add the diced tomatoes with juices, broth, one cup water, and the tomato paste and cook for 2 and 1/2 hours.
Step 2
Start in the sweet potatoes, bell peppers, celery, and zucchini. And the beans and chickpeas, cover, and cook on low until the sweet potato is tender, about 2 hours more. If you like more heat to your chili, you can add a pinch of red pepper flakes.
Step 3
Top with the cilantro when serving.
