Crock Pot Chicken & Gnocchi Soup 🥣

👩🏻🍳 INGREDIENTS:
1.5 lbs boneless skinless chicken breasts
1/2 large yellow onion, diced 🧅
2 garlic cloves minced 🧄

1 cup heavy whipping cream🥛
1 1/2 cup carrots shredded 🥕
3 sticks of celery, chopped
4 cups fresh baby spinach, chopped
2 tsp dried parsley 🌿
1 tsp dried thyme
1 tsp garlic powder
1 tsp dried rosemary
Salt and pepper, to taste (1 tsp each apx)
1 package 16 oz gnocchi
1 tbsp corn starch
✨INSTRUCTIONS:
1. In a large crock pot, add the chicken broth, onion, celery, carrots, garlic, spices, and chicken breasts. Cook on high for 4 1/2 hours.
2. During the last 45 minutes, cook your gnocchi according to your package directions & shred your chicken. Mix the cornstarch with the heavy whipping cream in a small bowl until smooth. Add the whipping cream, shredded chicken, cooked gnocchi, and spinach. Mix well and allow to cook for the last 30-45 minutes.
I split my soups into 8 servings.
