Kale, pistachios and basil pasta (ZOE)

With salad season coming to a close why not blend your kale into the creamiest, dreamiest pasta sauce.
Packed with kale, pistachios and basil this sauce is as nourishing as it is delicious. It works with so much more than pasta too, stir it through some white beans, as a dressing for grain bowls or over your favourite protein.
With a simple swap to wholewheat pasta you can double the fibre.
Here’s how to do it:

Instructions
Step 1
Blanch the kale
Step 2
Add the parmesan to a blender to grate then add in the rest of the ingredients
Step 3
Blend until smooth, adding water and tablespoon at a time until you reach the desired consistency
Step 4
Check the seasoning then stir through cooked pasta with a little pasta water
Step 5
Enjoy!
